What are Cornetti?
Cornetti are the Italian version of croissants. They are flaky, buttery pastries that are typically eaten for breakfast or as a snack. Cornetti are made with a yeast-based dough that is layered with butter, rolled out, and then shaped into a crescent shape. They are baked until golden brown and crispy on the outside, with a soft and tender interior.Ingredients
To make cornetti, you will need the following ingredients:- 3 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/4 teaspoons active dry yeast
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup water
- 1/2 cup unsalted butter, softened
- 1 egg, beaten
Preparing the Dough
To make the dough for your cornetti, follow these steps:- In a large mixing bowl, combine the flour, sugar, yeast, and salt. Mix well.
- In a small saucepan, heat the milk and water until they are warm to the touch (about 110 degrees F).
- Add the warm milk and water to the flour mixture and stir until a sticky dough forms.
- Turn the dough out onto a floured surface and knead for 5-10 minutes, until it is smooth and elastic.
- Place the dough in a large greased bowl and cover it with a damp towel. Let it rise in a warm, draft-free place for about 1 hour, or until it has doubled in size.
- Once the dough has risen, punch it down and turn it out onto a lightly floured surface.
- Roll the dough out into a large rectangle, about 1/4 inch thick.
- Spread the softened butter over the surface of the dough.
- Starting at the long edge of the rectangle, roll the dough up tightly into a log shape.
- Wrap the dough in plastic wrap and refrigerate it for at least 30 minutes.
Shaping and Baking the Cornetti
Once the dough has chilled, it’s time to shape and bake your cornetti.- Preheat your oven to 375 degrees F.
- Remove the dough from the refrigerator and unwrap it.
- Cut the dough into triangles, about 4-5 inches wide at the base.
- Roll each triangle up from the base to the tip, forming a crescent shape.
- Place the shaped cornetti onto a baking sheet lined with parchment paper.
- Brush each cornetto with beaten egg.
- Bake for 15-20 minutes, or until the cornetti are golden brown and crispy on the outside.
- Remove from the oven and let cool on a wire rack.
